...petting the stingrays...

When Andy and I honeymooned in Mexico, we decided to take an excursion to Xel-ha, an outdoor adventure park. It was there that I went snorkeling for the first time. As we were floating through the water, looking at different colored fish, Andy called out, "Look, Sharon, a stingray!" I immediately screamed and jumped into his arms, a difficult task considering we were treading water. My fearless husband laughed as I clung to him, unwilling to even look in the water.

The Saint Louis Zoo is home to Caribbean Cove, where cow-nose stingrays, crabs and little baby sharks dwell peacefully together. Did you know that stingrays are docile creatures? Like dogs and cats, they're just looking for a little love. So the zoo allows people to pet and feed the stingrays for a mere $5. But, if you get there in the first hour that the zoo is open, they let you pet them for free!

    I forgot to tell you that I got the cookbook. It looks to be very good. I'll pass along some recipes, like this one.

    Tomato & Corn Salad Serves 4-6

    You can use cilantro in the place of basil, if you like.
    4 cups corn, cooked or roasted
    1/8 cup olive oil
    2 tbsp. red wine vinegar
    3 medium tomatoes, diced
    1/2 cup feta cheese
    3 tbsp. fresh basil, chopped
    salt and pepper to taste

    Whisk olive oil and red wine vinegar in a medium sized bowl. Add the remaining ingredients and toss well. Season with salt and pepper. Cover and refrigerate until ready to serve.

    Have not tried this yet. Will wait until I can supply the fresh basil myself.

    Sharon I'm sorry I can't help you with your wishes for San Francisco. I hope you were able to get a group together. Does sound like a wonderful girls weekend. I'll be cheering for you!!!

    I've been following the story of the poor Nigerian girls. This evil Hoko Baram group has been in existence for some time. The U.S. should have put them on an official terrorist list along time ago. If we had we would have been keeping closer tabs on their activities and would have been in a better position to react to this incident. Now to find out that the Nigerian goverment had a four hour tip off and did not make an effort to stop this is unforgivable. The poor girls were the victims of two criminal acts that day. One of cowardice and neglect from their own goverment and one of brutality and kidnapping from this terrorist group. I'm praying for them. I think this a money raising effort for this group. Sick.

    It seems your now in the hands of the insurance company while they decide how much they want to pay out. It's a shame that home repair cost are so high. You could forgo dealing with the insurance people and just hire the work out and take care of it yourself.

    Sharon your blog is great as it is. It's embarassing how little I know about tech matters. What I know could fit on the head of a pin. The only reason I asked is I didn't know if you knew where I lived. I checked your map and it shows me in a neigboring city but that ok, close enough. The only reason I mentioned the email was about the pics but don't worry about it.

    Well off to do some household chores and this afternoon some canning. Have you ever done any canning? Trust me, much easier than yeast breads. haha.

    Afterwards I can spend some quality time on the back porch reading Major Pettigrew.

  2. I saw the video. It was great!!! But now I lost your comment hahaha.First let me tell you the weirdest thing. When saint-saens carnival of the animals started playing I was taken right back to the first time I ever heard that piece of music. Second grade music class with Mrs. Porter at Robert E. Lee elementry school. So many memories are evoked by music. Wonderful :))

    If I remember from pics you have a electric stove with burners, right? Are you wanting a pressure canner ? I have a flat glass top stove and you can't use a pressure canner on that kind of surface. So I'm limited to water bath canning. Made strawberry preserves and straberry jelly.
